MINNEAPOLIS, Minn., Mar 18, 2025 -- Silverbird Roasting Co. is bringing “Coffee and More” to the Kingfield neighborhood this summer. Founded by US Roasting Championship winner and industry veteran Tony Querio, Silverbird Roasting Co. has provided coffee for cafés and other businesses throughout the Twin Cities Metro and nationally since 2020. This project marks the brand's first expansion into their own brick and mortar location.
Joining Tony in the coffee shop project is his wife, Caitlin Querio. Caitlin comes from a background of seventeen years in project management and administration roles in both non-profits and higher education. Caitlin will lead the day-to-day operations of Silverbird Coffee. Tony will lend his expertise to the coffee operations/quality control and maintain his responsibilities as Owner and Director of Roasting at Silverbird Roasting Co.
Silverbird's upcoming café is located at 4237 Nicollet Ave, which previously held Kruse Markit. The space is being redesigned to focus on exceptional coffee service and will include increased seating to welcome customers with a variety of seating options to fit their needs. Patio seating is in the works, to make the most of our amazing summers.
“Owning a coffee shop has been a dream for both of us, before we ever even met each other. Our vision of what that might look like has evolved in many ways over the past two decades through our travels and experiences,” said Caitlin. “We are so excited to finally have the opportunity to see this dream come to life as we settle into this incredible neighborhood.”
The couple is working to create a space that is comfortable and welcoming, with a focus on exceptional quality in service and beverages. Silverbird Coffee will feature full espresso service and retail bags from Silverbird Roasting Co., along with pastries and other food items from select, local vendors.
“Silverbird’s coffee program is built on a balance of consistently dependable blends and exciting and vibrant, single-origin seasonal offerings. We’re excited to be able to showcase our coffees our way,” says founder Tony Querio. “While coffee is our foundation and focus, we believe in excellence in everything. After all these years dreaming of what this space could become, we might just have a few tricks up our sleeves.”
