This selection from Pablo Ponce offers a juicy and sweet experience, full of delicate aromatics. From the moment we open the bag we’re struck with a perfumey bouquet that carries through into the cup. The first sip sings with bright Meyer lemon notes that drift into jasmine blossoms. As the cup cools the sweetness opens up into raspberry custard. The cup finishes with a delicate, lingering echo of vanilla bean and caramel.
Pablo Ponce owns a 5-hectare coffee farm named Perla Chiquita outside the town of La Perla. This lot is exclusively made up of the Sidra variety, which was developed in Ecuador and has a history shrouded in mystery and rumors. Pablo himself has a long history in coffee, but his passion truly exploded while on a trip to Milan.
Tony, our founder, visited farms in this town ten years ago on his first trip to Ecuador. This area of the country is full of breathtaking vistas of steep, lush mountaintops. Walking through the farms, he was literally wrapped in clouds blowing through the mountainous farms. This lush terrior, mixed with the unique varieties found in this area, leads to incredibly wild and dynamic coffees like this one.
