This lot of Daniel Bolaños’ Pink Bourbon is sweet and smooth with soft fruit notes and a clean, silky mouthfeel. The first sip is full of fresh melon flavors, similar to perfectly sun-ripend cantelope and watermelon agua fresca. Cooling, the cup takes on a honeycomb note contrasted against tart cherries and orange zest, almost like a traditional Wisconsin Old Fashioned. Throughout the cup there is a soft creaminess, reminding us of rocky road ice cream served in a classic waffle cone. Throughout our early tastings, the team kept saying, “This is just a really great coffee. I want more of that.”
Daniel Mauricio Bolaños is a member of Asociacion los Naranjos in San Agustin, a producer group Tony has been working with for over a decade. He owns and operates two Farms, El Pacer and La Espreanza, both of which are approximately 5-hectares.
Following harvest, Daniel stores the coffee in cherry for 48 before deluping. He then rests the coffee for another 72 hours, partially submerged to complete the fermentation process. The coffee is then fully washed and dried on raised beds or in the parabolic drier for 20-25 days.
