Sítio Serra do Boné has a deep history of producing outstanding specialty grade coffee for over 30 years. Throughout that history Carlos Sérgio Sanglard has been a Cup of Excellence finalist multiple times, including winning first place in 2003. He has been able to use his success to expand his farm and experiment with multiple varieties and processing methods. This microlot is a red honey processed Red Catuai variety. Honey processing is very similar to the Brazilian tradition of pulped natural processing, but the distinction is found in the use of time. While pulped naturals are speed driven, Sérgio made the choice to slow down the drying process and allow the fruit begin fermenting. This creates a more pronounced fruitiness in the cup, without the heaviness that would have come from a natural process.

In this cup we are seeing a lot of red fruit that reminds us of wild raspberries, fresh strawberries, and currants. As those flavors open up a little, it actually tastes like the pulp of a ripe coffee cherry. Supporting this fruitiness is a well structures chocolate and nut profile. We are seeing flavors of toasted hazelnuts and chocolate covered toffee. The finish has a creaminess very similar to a fresh banana shake.
