Naga Singage - Ethiopia
COMPLEX & SWEET
Blueberry Pie, Jasmine Tea & Waffle Cone Sundae
PRODUCERS: Many Small-scale Farmers
REGION: Yirgacheffe, Gedeo Zone
PROCESS: Cherry Dried
VARIETIES: Krume & Wolisho
Naga Singage is sweet and complex with notes of cooked berries throughout the cup. The initial impression is that of blueberry pie at the peak of the season. Cooling the berry notes richen and gain complexity; morphing into a mixed berry compote. Dancing above this sweetness is the subtle floral notes of a delicate jasmine blossom tea. Underscoring the cup we see notes of creamy vanilla, a soft spiciness and a hint of almond or pecan which together reminds us of a waffle cone sundae - the perfect foundation for that berry compote.
Naga Singage is part of the Adorsi washing station. This once abandoned mill was reopened by the Testi Coffee group in 2018. It supports farmers from the nearby communities and creating microlots that increase traceability and maintains their unique flavor profiles.
The Naga Singage mountain is highly important to the Gedeo culture. It is the place where a songo is preformed - a reconciliation cermony where indivuals climb the mountain to seek resolution and consultation from their elders.
